I tried a few new recipes this week and this muffin recipe was outstanding.  After enjoying zucchini at Benihana this weekend, I was reminded how much I like it and should really be cooking it more.  My husband and children are not big fans so I thought I would start with something dessert like and move on from there.  Here’s the recipe I tried and everyone agreed that the muffins were delicious.  This will definitely go in the make again file.

Ingredients

1/2 C canola oil

1 1/2 C all-purpose flour

1 tsp baking powder

1 tsp cinnamon

1/2 tsp ginger

1/2 tsp salt

1/4 tsp baking soda

1/4 tsp nutmeg

pinch of cloves

1/2 C brown sugar

1/4 C white sugar

2 eggs

1 tsp vanilla extract

1 medium zucchini, coarsely grated (about 1 1/2 cups)

Directions

Heat oven to 350F.  In a medium bowl, whisk together flour, baking powder and spices.  In a large bowl, mix together the oil, sugars, eggs and vanilla; mix in zucchini.  Add the flour mixture and mix until just combined (do not over mix).  Divide batter into muffin cups (approx. 12) and bake for 25-30 mins.
