I never used to like sweet potatoes.  When I was a kid, we would only eat them at Thanksgiving and Christmas.  My mom would prepare them in an orange juice marinade and then topped with brown sugar and marshmallows.  The whole concept sounded disgusting to me as a kid and still is not appealing to me at all.  It wasn’t until I met my husband’s family who eat sweet potatoes just like they eat regular white potatoes.  They steam them in the microwave and eat them with nothing on them but some butter or salt and pepper.  I remember giving them a try and thinking that they were pretty good all on their own.

When my kids were babies, sweet potatoes were one of their favorite foods.  Starting with mashed and then graduating to cubes.  I could always count on them eating sweet potatoes in great abundance.  They still love sweet potatoes and prefer them over any other kind of potato.

Our favorite way to prepare them now is to bar-b-que them mixed with white, red or yellow potatoes, onion, olive oil, salt, pepper and thyme.  Every time they come out perfectly yummy.

The dish I’m making tonight is easy and super yummy.  Chicken pieces, sweet potatoes and onions tossed with olive oil, salt, pepper, thyme and maple syrup.  Bake in a big roasting pan for 1-1 1/2 hours.  Serve with salad and it’s an little work dinner that everyone in my family loves.sweet potato
