Today is the first day that it really feels like and looks like winter here.  We woke up to a few centimeters of snow, blowing winds and a -15C windchill.  After bundling the kids up and off to school, I started to think about lunch and dinner ideas.  My youngest son is home for lunch but doesn’t like to eat lunch.  He would rather snack all day so usually I don’t put much effort into lunch.  I suspect that after school the kids will want to go sledding and have a snowball fight while the sun is still up so instead of being stuck in the kitchen cooking while they are having all the fun: soup it is.  I love soup and a homemade biscuit as a meal.  My husband is more of a meat and potatoes guy but he’ll accept my offering of hearty soup on occasion.  Easy, quick and core warming after some fun in the snow.

Anyone have a good minestrone soup recipe?
