My family loves bacon but rarely do we ever eat it at home because it’s greasy and messy to cook.  I will buy regular pork bacon if I need it for a recipe but usually we eat turkey bacon.  Today we had turkey bacon, lettuce and tomato sandwiches for lunch.  So yummy!  I find cooking turkey bacon is much cleaner and more forgiving.  It doesn’t shrink or curl up so a few slices covers what you want and I don’t[…]

I tried a few new recipes this week and this muffin recipe was outstanding.  After enjoying zucchini at Benihana this weekend, I was reminded how much I like it and should really be cooking it more.  My husband and children are not big fans so I thought I would start with something dessert like and move on from there.  Here’s the recipe I tried and everyone agreed that the muffins were delicious.  This will definitely go in the make again file. Ingredients[…]

This past Saturday my husband and I had a super date night.  The anticipation of this date was filled with worry, apprehension and excitement but I’m happy to report that the results were wonderful. My husband usually plans most of our nights out because if it were left to me we would probably never go anywhere.  I don’t like risk or change or new things.  I’m very happy going to the same restaurant and ordering the same food because past results have taught me that it[…]

While searching the fridge for lunch ideas, I came across a chuck of Velveeta cheese that had been purchased for a previous new recipe but I didn’t use the whole block.  This sad, squished lump inspired me to make macaroni and cheese from scratch.  My mom used to make it when I was a kid and it was the best thing ever.  I couldn’t wait for my son and husband to try it at lunch to see if I managed[…]

My mother-in-law gave me this recipe last Christmas so that I could reproduce these soup kits with the kids to give to teachers and neighbors.  It’s a little time consuming collecting jars and ingredients, but once you’ve got it all it’s easy to put several together all at once.  They look really nice in a glass or plastic jar, all the ingredients layered and a recipe card with instructions tried with a ribbon around the lid.  We like this yummy recipe[…]

Today is the first day that it really feels like and looks like winter here.  We woke up to a few centimeters of snow, blowing winds and a -15C windchill.  After bundling the kids up and off to school, I started to think about lunch and dinner ideas.  My youngest son is home for lunch but doesn’t like to eat lunch.  He would rather snack all day so usually I don’t put much effort into lunch.  I suspect that after school the[…]

I’m stuck in a rut when it comes to packing snacks for my son for school.  I like to pack him two things, usually a fruit and something else but lately he’s been picky and I’ve been lazy.  He’s taken frozen yogurt and a fruit snack every day this week and he must be bored with it because I’m bored just thinking about it.  He tells me about what other kids are bringing in hopes that I’ll let him bring[…]

I’m really frustrated lately with what my kids won’t eat.  What used to be go to meals are no longer being eaten.  Most meals are met with turned up noses, sour faces and pleads from Mom and Dad to please eat some of it because you liked it the last time we ate it.  All of it results in a lot of food being thrown out, frazzled parents and two kids who just want to eat “snacks”.  To get inspired, I[…]

I never used to like sweet potatoes.  When I was a kid, we would only eat them at Thanksgiving and Christmas.  My mom would prepare them in an orange juice marinade and then topped with brown sugar and marshmallows.  The whole concept sounded disgusting to me as a kid and still is not appealing to me at all.  It wasn’t until I met my husband’s family who eat sweet potatoes just like they eat regular white potatoes.  They steam them in[…]

Serving sizes drive me insane.  Snack product serving sizes especially.  They want their product to seem healthy, heart conscious, low-fat, source of omega-3 or whatever the catch phrase of the day is.  I think more people are taking time to read labels looking for fat content, sodium content etc.  I wonder how many people are looking at the serving size though? You pick up that box of crackers that looks yummy.  You check out the label…oooh, it’s got whole grains,[…]
