My mother-in-law gave me this recipe last Christmas so that I could reproduce these soup kits with the kids to give to teachers and neighbors.  It’s a little time consuming collecting jars and ingredients, but once you’ve got it all it’s easy to put several together all at once.  They look really nice in a glass or plastic jar, all the ingredients layered and a recipe card with instructions tried with a ribbon around the lid.  We like this yummy recipe so much that I like to have a few in the cupboard for quick meal ideas on snowy cold days.  Tonight I’ve used my last one so I’ll have to make some more soon.

Bazaar Soup Mix Ingredients for the Jar

(Layer all ingredients in the jar, place pasta in small plastic bag first)

1/4 C dried lentils

1/4 C dried green split peas

1/4 C uncooked long grain rice

2 tbsp. pearl barley

4 tsp beef bouillon granules

2 tbsp dried minced onion

1 tsp celery salt

1 tsp italian seasoning

3 tbsp dried parsley flakes

1/2 C uncooked small pasta

 

Additional ingredients for cooking time

1/2 lb ground beef

8 C water

1 can diced tomatoes, undrained

I also like to add in 1 can of drained kidney beans and 1 can of drained corn.

 

To prepare soup:

1.  Remove pasta and set aside.  In a soup pot, brown ground beef and drain.  Add water, tomatoes and soup mix; bring to a boil.  Reduce heat; cover and simmer for 45 minutes.

2.  Stir in pasta; cover and simmer another 15 minutes.
